Yellowtail Fillet Ingredients
4 (6 ounce) yellowtail fillets (silver perch and yellowtail snapper are ok substitutes)
4 tablespoons ancho chile powder
4 tablespoons kosher salt
2 tablespoons black pepper
Mango Salsa Ingredients
2 mangoes, small dice
1 medium red onion, small dice
1 cucumber, peeled, seeded, small dice
2 jalapeno peppers, minced
1/4 cup cilantro leaves, chopped
1/2 tablespoons ancho chile powder
2 large limes, juiced
2 tablespoons olive oil
Salt & Pepper
1. Make the Mango Salsa first (if possible you can make it the day before if your schedule allows).
2. It’s super simple: mix all the ingredients in a bowl.
3. Then prepare your grill and oil your grates. Once it is up to temp, brush olive oil over the fillets and sprinkle them with the chili powder, salt and pepper. Grill on each side for 3 minutes
4. Remove from heat and top with Mango Salsa.
