It is healthy, and is perfect for those who prefer recipes from scratch. Also, this tomato soup is a vegetarian recipe, so it works perfectly if you follow this lifestyle. Tomato soup recipe Very ripe tomatoes are ideal for this soup. With this recipe, you may substitute ingredients and add your favorites.
Ingredients:
- 6 tomatoes
- ½ onion chopped
- 2 garlic cloves minced
- 2 tbsps Olive Oil
- ½ tbsps of sugar
- 1 cup of chicken or vegetable stock
- 1 bay leaf
- Salt
- Pepper
- Olive oil
Directions:
Fill a pot with water and add the tomatoes. Let them boil for a couple of minutes, remove them and submerge them in cold water. This step will help you remove the skin easily. Once skinless, chop tomatoes in small cubes and set aside. Heat up the oil in a saucepan, add the onion and garlic. Cook until golden. Add the chopped tomatoes, the bay leaf, a pinch of salt and pepper, your preferred broth and the sugar. Lower the temperature to a medium heat, and let it simmer for 30 minutes. Stirring from time to time.
Once it is done, you can enjoy it as is, with the chunky pieces, or you can liquefy it for an even creamier texture. If you go for the blended version, don’t forget to remove the bay leaf 🙂
When serving your dish, you can garnish with fresh parsley or basil leaves. Croutons, grated parmesan cheese, and a swirl of extra virgin olive oil on top will make it even better.
